Our Method
Every sip of our cascara and coffee hold a story of patience and precision. We believe that a natural process is key to unlocking the best flavor characteristics from the coffee fruit.
Selective Red-Picking:
Our farmers only harvest perfectly ripe, bright red coffee cherries. This step is the fundamental foundation for producing coffee & cascara with optimal natural sweetness.
Hygienic & Rapid Processing:
The harvested coffee cherries are immediately processed at our facility. The fruit skins are carefully separated to maintain their integrity, then washed with pure mountain spring water.
Slow Drying:
Our coffee and cascara are dried slowly on raised beds to ensure even air circulation. This method preserves nutrient integrity and aromatic complexity, preventing undesirable flavors.
Our Green Commitment:
We produce zero waste. We process the remaining coffee pulp into natural compost to enrich the soil. We minimize water usage and are committed to being a 100% pesticide-free producer.
